Ingredients

    2 medium Red or Yellow Peppers, chopped
    1 med Onion, chopped
    8 slices Bacon
    15 large Eggs
    7 oz Cheddar Cheese, shredded
    15 Flour Tortilla - Burrito Size
    3 Potatoes - Cubed & Roasted
    2 tbsp Extra Virgin Olive Oil

Don't burn your hands roasting the taters!


Directions

Cube and roast potatoes first (425 for 25-30 min). Sauté onions in 1 T of the olive oil. Add peppers when they turn golden. Sauté another 3-5 min. Cook bacon and cut into chunks. Assemble your ingredient bowls. Scramble the eggs last in the other T of olive oil. Heat the tortillas in the microwave to soften, 30-60 seconds, between towels (or paper towels). We did them in batches of 4 for 30 seconds. Add ingredients and roll tightly. Wrap in cling wrap and freeze. To reheat: place in microwave in the wrap first. Heat 1 minute and turn. Heat another minute and remove wrap. Heat 1 more minute or more, trying to not make burrito hard around the edges. Add hot sauce and/or salsa as desired.
