Ingredients
-
200 gram Spinach, fresh
100 gram(s) Grounds almonds
50 trams toasted almond flakes
100 gram Parmesan cheese
50 gram(s) Flax seed (ground)
1 tsp Fennel seed
1 tsp Cumin seed
1 tsp Mustard seed, yellow
0.5 tsp Chili powder
0.5 tsp Salty seasoning (Indian all purpose is good)
Tips
Why stop at spinach? I might try broccoli next, or maybe tomato and olive would be nice?
Directions
Put the spinach into a jug and blend into a puree. It doesn't have to be perfect. Grate the parmesan cheese into the mixture, and then add everything else. Hand mix with a spoon until everything is well combined. Spoon mixture onto a non-stick baking tray and flatten out (by hand is easiest) into a large square (no more than 1/4 inch thick is best). Take a blunt knife and cut the raw mixture into 20 evenly sized pieces. This is easily done by cutting then carefully increasing the width of the cuts so that each cracker piece becomes slightly separated from the others. This will help to keep each cracker evenly cooked and will give you a nice slightly browned crispy edges on every cracker. Bake in a medium oven for about 30 minutes, then turn over crackers and bake for another 15 minutes on the other side. Easiest way to turn them over is to turn upside down onto another baking tray, but turning each by hand works just as well. Once cooked, allow to cool slightly, then top with your favourite toppings.
