Introduction

Ingredients

    3 large Sweet peppers (bell)
    1 tbsp Olive Oil
    2 clove Garlic, pressed
    1 medium onion, diced
    2 tbsp Taco Seasoning Mix
    1 lb Lean Ground Turkey
    2.25 cup Black Beans, drained and rinsed
    1 cup frozen corn kernals
    1.5 cup Salsa
    1 cup, shredded Cheddar Cheese
    2 tbsp light sour cream
    chopped cilantro for garnish

Directions

Cut peppers in half and clean out seed
Bake at 350 F for about 20 mins

While peppers bake, heat olive oil in a fry pan
add onions and garlic and saute
add turkey and taco seasoning and cook until well browned
add can of black beans and salsa and cook til turkey is finished cooking. Turn pan off and keep warm.

Remove peppers from oven and fill with turkey filling. Top each half with 1/6 of the cheese. Return to oven and back another 15 minutes.

Top each half pepper with 1 tsp of light sour cream and chopped cilantro.
