Ingredients

1 medium Carrot, shredded
1 clove Garlic, minced
3/4 tsp. Salt
3/4 tsp. Basil
1/4 tsp. Pepper, black
10 oz Spinach, frozen
1/2 lb. Turkey, Ground turkey, 93% lean
1/2 cup Bread crumbs, dry, grated, seasoned
3 tbsp Parmesan Cheese, shredded
1 large Egg
1 tbsp Olive Oil, cooking spray
Directions
Pre-heat oven to 400 degrees.
In a frying pan spray a small amount of olive oil, saute minced garlic and shredded carrot. Add in salt, basil, & pepper until veggies are tender. Add spinach; cook until it wilts. Remove from heat & place in a large bowl.
Stir meat, bread crumbs, cheese and egg into the veggies and mix.
Shape into 1 1/2 inch balls. Place 1 inch apart in a baking pan.
Bake for 18 to 20 minutes, until no longer pink.
Serve with your favorite pasta and marinara.
