Ingredients

1 tsp vanilla extract
1/4 cup almond butter
1 1/2 cups old fashioned oats
2 servings vegan protein powder (about 120-130 calories and 20-22 G protein per serving)
4 tbsp ground flax seed meal
4 tbsp semi-sweet chocolate chips (or dark)
1/2 cup unsweetened almond milk
Salt to taste
Tips
You can sub out or add nuts and dried fruit, use chia or hemp seeds instead or flax, or added to flax. You can also use any nut butter or milk you like. It's a very flexible recipe.
For gluten-free, make sure oats are certified gluten free.
Directions
Combine all ingredients in a bowl and mix together using your hands, adding little splashes of water to combine well. Line an 8x8 pan with parchment paper, and press mixture into pan. Put pan in freezer and allow to freeze for an hour to overnight. Cut into 8 bars, wrap individually in plastic wrap, and store in freezer. You can take them out and they will thaw in a few minutes to eat.
