0.33 cup Canola Oil
.75 cup, packed Brown Sugar
1 cup Soy Milk, Original, Trader Joe's (by LIVE2EAT2LIVE)
.33 tbsp Bragg Apple Cider Vinegar
2 tbsp Corn startch (by JHENION)
.75 tsp Baking Powder
.5 tsp Baking Soda
.5 tsp Kosher Salt (by SRATERMAN)
1 tsp Vanilla Extract
1 tsp Almond Extract (by CRANKYGIRL)
Directions
Mix the vinegar with the soy milk and sit aside for a few minutes to curdle.
Preheat oven to 350.
Mix the oil, sugar, and soy milk mix until sugar is dissolved.
Mix in the flour, corn starch, baking powder, baking soda, salt and extracts. Mix until smooth
Line muffin try with muffin cups, filled each 3/4 of the way.
Bake at 350 for 16-22 minutes, depending on oven.
