Introduction

Simple to make and goes great with any curry or stir-fry. Simple to make and goes great with any curry or stir-fry.

Ingredients

    0.25 cup Bob's red mill organic Buckwheat flour
    0.75 cup Bob's Red Mill Tapioca Flour (1/4 cup)
    0.5 tsp Salt, "Real Salt"
    2.0 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    13.66 oz Thai Kitchen canned full fat coconut milk(full can)

Directions

Mix all ingredients. (If coconut milk has separated, mix it back together before adding dry ingredients.) Pour batter by 1/3 cupfuls onto greased griddle or skillet over medium heat. Cook until browned on one side, flip, and cook until browned on second side(be patient, it cooks kind of slow) Cool on wire rack. DO NOT STACK- they will get soggy. Serving Size: makes approx 12 flatbreads
