Ingredients

    1/2 cup Flour, white
    1/2 stick Butter, unsalted
    2 1/2 cup Fat Free Milk
    32 oz Medium Pasta Shells (2 boxes)
    1/3 cup Crumbled Bacon (optional)
    16 oz Sharp Cheddar Cheese Shredded

Tips

Don't walk away from the sauce when thickening/starting to boil.


Directions

In a pot big enough for all the pasta, bring water with a pinch of salt and dash of olive oil to a boil, add pasta and set the timer per the boxes instructions.

In a pan Melt butter over medium low heat and wisk in 1/4c of the flour to form a smooth rue/paste.

Add 1/2c of the milk and wisk to combine. Then wisk in the remaining flour until smooth.

Add the remaining milk and wisk until smooth. Turn heat to medium high and bring sauce mixture to a boil making sure to stir often. It thickens quick, do not walk away!

When it reaches a boil it will thicken fast! Turn heat down to low and mix in the shredded cheese 1 handful at a time until it is all melted/combined.

Stir in crumbled bacon and keep stirring while it simmers for 2 minutes and the sauce is done, remove from heat.

When pasta is ready strain it and return it to the pan.

Pour all the sauce in and mix to combine, serve right away.

Serving Size: makes approx. 16 1 cup servings
