Ingredients

    1 tbsp Canola Oil
    8 serving Bacon - Farmland Thick Sliced Bacon
    24 oz Tyson boneless, skinless chicken breast
    1 large Onions, raw
    3 clove Garlic
    3 serving 1 Med. Green Bell Pepper
    1 cup, diced Celery, raw
    3.5 cup 365 Organic Diced Tomatoes
    1 tsp, crumbled Bay Leaf
    1 tsp Thyme, ground
    2 tsp Pepper, white
    1 tsp Pepper, red or cayenne
    1 cup Parsley
    1.5 cup Rice- Royal Blend Texmati White, Brown, Wild & Red Rice Rice Select (dry)
    3 cup (8 fl oz) Chicken Broth

Directions

Directions:

 Heat oil in large pan and add the meat when oil is hot. Cook (stirring often) until brown.
 Transfer meat to large casserole dish.
 Add vegetable ingredients to the hot pan and cook until the onion are soft.
 Add the tomatoes and spices to the vegetables and bring to a boil. Lower temp. and simmer for 5 min.
 Pour sauce over meat in casserole dish.
 Stir in Chicken Broth and uncooked rice ingredients.
 Cover and bake in a pre-heated 375 F oven until rice is cooked (45 – 55 min).
