1 tbsp Canola Oil
8 serving Bacon - Farmland Thick Sliced Bacon
24 oz Tyson boneless, skinless chicken breast
1 large Onions, raw
3 clove Garlic
3 serving 1 Med. Green Bell Pepper
1 cup, diced Celery, raw
3.5 cup 365 Organic Diced Tomatoes
1 tsp, crumbled Bay Leaf
1 tsp Thyme, ground
2 tsp Pepper, white
1 tsp Pepper, red or cayenne
1 cup Parsley
1.5 cup Rice- Royal Blend Texmati White, Brown, Wild & Red Rice Rice Select (dry)
3 cup (8 fl oz) Chicken Broth
Directions
Directions:
Heat oil in large pan and add the meat when oil is hot. Cook (stirring often) until brown.
Transfer meat to large casserole dish.
Add vegetable ingredients to the hot pan and cook until the onion are soft.
Add the tomatoes and spices to the vegetables and bring to a boil. Lower temp. and simmer for 5 min.
Pour sauce over meat in casserole dish.
Stir in Chicken Broth and uncooked rice ingredients.
Cover and bake in a pre-heated 375 F oven until rice is cooked (45 – 55 min).
