Introduction

Set it and forget it in the slow cooker! You can add some red pepper flakes if you like things on the spicy side! Also, top with parm or serve with croutons if you'd like. Ingredients

    6 cup Vegetable Broth
    .9 cup Cento Tomato Puree (by IONLYDOGPADDLE)
    1.9 cup Beans, great northern
    .5 cup Brown Rice, medium grain
    1 cup, chopped Onions, raw
    .5 tbsp Basil
    2 clove Garlic
    8 cup Spinach, fresh (can use kale, just remove stems)
    1 dash Salt
    1 dash Pepper, black

Directions

In a 3.5-4 quart slow cooker, combine broth, tomato puree, beans, rice, onion, basil, salt, pepper and garlic. Add red pepper flakes, if desired.

Cover, cook on low for 5-7 hours or high for 2.5-3.5 hours.

Just before serving, stir in spinach. Top with parm and/or croutons if desired. [Not in nutritional info]
