Ingredients

2 serving Eggland's Best Large Egg
1 tbsp Bob's Red Mill Guar Gum (Correct Info)
2 oz Philadelphia Original Cream Cheese
1 C water
1 tsp Vanilla Extract
1 tsp Cinnamon, ground
2 TBL Swerve Granular sweetener (or of your choice)
1 tsp cinnamon
Oil for frying
Tips
The nutritional information I have listed includes 1TBL oil to account for what has been used up in the frying process. Therefore it's just an estimate. Make sure to keep your oil at 375 for optimal frying without too much oil absorption
Directions
In a blender, combine the eggs and cream cheese until completely blended. You really need a blender or food processor or it won't completely blend. Transfer to a bowl and whisk in the one cup of water. Add the guar gum, 1 tsp at a time whisking well (or using a hand mixer) after each addition to keep batter smooth.
Transfer mixture to a piping bag fit with a large fluted tip (or round tip). If you don't have a bag, use a ziplock bag with the corner cut off.
Heat your oil to 375 and squeeze the batter into the oil in short strips. Cook for about 5 minutes, turning in the oil as needed.
Transfer to a paper towel lined plate and then toss in the sweetener/cinnamon mixture.
