Ingredients

    1 cup Egg White (Naturegg Simply Egg Whites) Per 1/4 cup (about 2 whites)
    3 large Egg, fresh, whole, raw
    400 gram(s) Europe's Best Roasted Gourmet Tuscan Inspired Blend (by SCOTIANRUNNER)
    125 grams Goat Cheese, Soft
    8 serving Cherry Tomatoes, Fresh, 1 Tomato

Directions

Cook the frozen vegetables according to the package directions.
Preheat oven to 400 F.
Mix the egg whites with the eggs. Add salt and pepper/dried or fresh herbs if you like.
In a lightly oiled pie plate, put the vegetables at the bottom. Put the cherry tomatoes in a pattern you like over the veggies. Scatter chunks of goat cheese over the surface of the vegetables. Add the egg mixture.
Bake for 15-20 minutes, until the egg is set.
Serve with toast and salad.
