Ingredients
-
1 lb chicken breast
1 package Bird's Eye Sugar Snap Pea Stir Fry
1 med. onion cut into strips
1 bell pepper cut into strips
I usually add broccoli also, you can add whatever other veggies your family likes.
4 tbs kikkoman teriyaki marinade
Chinese 5 spicen (or whatever spice you prefer for stir fry)
3 tbsp corn starch
1 cup chicken or vegetable broth
2 cups rice cooked
Directions
Cut chicken into bite size pieces, place in bowl with soy sauce, corn starch (save about a tbsp to mix with broth) and seasoning mix well. Place in saute pan with olive oil and saute until just done.
remove chicken from pan, add more oil if needed, add onion and peppers saute for a couple of minutes and then add remainder of veggies and chicken broth. (reserve a little of the chicken broth to mix with corn starch to thinken). Add chicken and teriyaki marinade (this is optional, you can flavor anyway you like, there are lots of options).
Mix remainder of cornstarch with a little broth and add to stir fry, continue to cook until thickened a bit. Serve over rice.
This is very versatile and can be made to suit your tastes. Substitutions are fine, it tastes good, I never make it the same way twice!)
