Ingredients

    1/3 cup butter substitute (e.g., I Can't Believe It's Not Butter, Light)
    3/4 cup crushed Graham Crackers (original, honey, or cinnamon)
    1/2 cup flour (all-purpose, unbleached)
    3/4 cup sugar (or sugar substitute)
    16 oz fat free cream cheese
    4 medium eggs
    1 tbsp soy milk (or other milk substitute)
    1 tsp Vanilla extract, imitation
    1/4 cup blueberries (fresh or frozen, unsweetened)

Directions

Preheat oven to 350F. Lightly grease 8x8in cooking pan.

In a medium bowl, combine melted butter, graham crackers, flour, and 1/4 cup sugar. Mix until light soft dough has formed. Press lightly across the bottom of the cooking pan to form crust. Bake for 8-10 minutes or until crust is golden brown.

In a large bowl, combine 1/2 cup sugar, cream cheese, eggs, soy milk, and vanilla. Blend until mixed thoroughly. Pour mixture on top of warm crust. Add blueberries on top if desired. Bake for 18-20 minutes, until center is firm.

Allow to cool in pan for 20-30 minutes. Chill in fridge for at least 3 hours or overnight for desired texture. Cut into bars; store in fridge.

Serving Size: Makes 16 bars.
