Introduction

Ingredients

1 whole box of Fit & Active Rosemary & Olive Oil Quinoa/Brown Rice Blend (mix)
1 64g can of sliced Black Olives (or less depending on how much you like olives)
2 Casual Gourmet Chicken Sausage - Tomato, Basil and Mozzarella (or spinach and feta)
.5 medium Onions, diced
about 1/3 to 1/2 of red bell peppers, sliced
3 clove minced garlic
1 cup spinach, fresh
Directions
1. Cook sausages according to directions, set aside to cool.
2. Cook brown rice/quinoa mixture according to directions.
3. While rice is cooking-- dice 1/2 onion, slice 1/3 to 1/2 of a red bell pepper, and mince garlic (or use pre-minced).
4. Saute onion and garlic over medium-high heat until aromatic, then add peppers and pre-sliced olives. When almost finished, add spinach and slightly wilt.
4. Cut sausages in half and then slice into half moon pieces. Add sausage and veggies to quinoa/rice mixture. Serve.
Optional: add crumbled goat cheese on top (not included in calories)
