Introduction

Ingredients

    2.0 cup kale - Glory chopped kale, fresh
    15.0 spear, medium (5-1/4" to 7" long) Asparagus, fresh
    0.5 cup, pieces or slices Mushrooms, fresh
    0.5 cup, sliced Sweet peppers (bell)
    3.0 tbsp Extra Virgin Olive Oil
    5.0 large Egg, fresh, whole, raw
    1.0 cup Colby and Monterey Jack Cheese shredded

Directions

2 tbsp of olive oil in iron skillet over medium heat add kale and drizzle tablespoon olive oil , salt and garlic. Chop asparagus and cover for two-three minutes. Add red onion and mushroom. Sprinkle with salt and pepper. Beat 5 eggs pour over vegetables. Sprinkle cheese over all and bell peppers. Cover and put in 425 oven for 15 minutes.

Serving Size: A quarter of the pie.
