Ingredients

    coconut oil cooking spray
    1 eggplant, 1/2" slices
    3 medium Zucchini, sliced
    3 cup Squash - Yellow, sliced
    4 roma Tomatoes, sliced
    2 tbsp dried Basil (divided)
    2 tsp Italian Seasonings
    1 med yellow onion
    1lb 80/20 ground beef
    8 oz Mozzarella Cheese, grated
    4 tbsp Parmesan Cheese, grated

Tips

I used a cast iron grill on my stove top to grill my vegetables. Next time I think I'll add mushrooms, yum!


Directions

Spray 9x13 baking dish with cooking spray. Grill eggplant, zucchini and squash. Then layer veggies into baking dish. Sprinkle each layer with a bit of basil. Add sliced tomatoes. Brown meat and onion with some seasoning of your choice (I used Italian seasoning), drain. Spread meat over top. Shred some mozzarella and Parmesan. Sprinkle cheese on top with a little more basil. Bake at 350 for 45 minutes. Enjoy
