    • 1-1/2 lb. chicken breast, skinned and fat removed
    • 1/2 cup fresh lemon juice
    • 1/2 cup fresh sliced lemon peel
    • 3 teaspoons chopped fresh oregano or 1 teaspoon dried oregano, crushed
    • 1 medium onion, sliced
    • 1/4 teaspoon salt
    • black pepper to taste
    • 1/2 teaspoon paprika


1. Place chicken in 13x9x2" glass baking dish.

2. Mix lemon juice, lemon peel, oregano, and onions. Pour over chicken, cover and marinate in refrigerator several hours or overnight, turning occasionally.

3. Sprinkle with salt, pepper, and paprika.

4. Cover and bake at 325 F for 30 minutes. Uncover and bake 30 minutes more or until done.

Yield: 4 servings--Serving Size: One chicken breast with sauce

    We hate chicken breats normally but this was incredible and will become a firm favourite. Everyone loved it and asked for more! Served with mixed vegetables and potatoes, filling and beautiful meal. - 4/14/11

  • Ended up marinating a day and a half. Was excellent. I didn't have white wine vinegar so I used white vinegar and white wine. Worked great! - 6/16/10

  • I followed this recipe without making any changes, and it was very good. The lemon flavor was tangy, but not overpowering. It was a nice change and I will make it again. - 5/13/10
