Ingredients

    4.0 cup (8 fl oz) Chicken Broth
    6.0 cup, chopped Kale
    1.0 cup, chopped Onions, raw
    1.5 cup, cubes Sweet potato
    6.0 oz Atlantic Salmon (fish) (.5 filet option = 198g)
    1.0 cup Brown Rice, long grain
    4.0 cup Coconut milk (light)
    2.0 tbsp jalepeno
    1.0 tsp red pepper flakes
    1.0 tsp cumin seed
    1.0 tsp tumeric
    2.0 tbsp mango chutney

Directions

Saute onion, sweet potato (cubed), and chopped jalepeno in 2 tablespoons of olive oil until onion becomes slightly transparent. Add kale with spines removed and chopped. Add chicken broth and coconut milk as well as basmati brown rice. Bring to a broil then simmer for 30 minutes. Add cubed salmon pieces during last 10 minutes. May also add red pepper flakes, tumeric, cumin to taste and two tablespoons of favorite chutney at first step if desired. Serving Size: Makes 8, 1.5 cup servings
