Introduction

Ingredients

    1 tbsp olive oil or Butter, salted (nutrition info has butter)
    1 medium (2-1/2" dia) Onions, raw , diced
    2 stalk, large (11"-12" long) Celery, raw, diced
    2 tbsp Curry powder
    1 tbsp Fish Sauce or soy sauce, or 1/2 tsp. salt, or to taste
    2 cup cooked Lentils (I use cooked or frozen/cooked, but you can use dried or canned -- see notes)
    3 clove Garlic , minced
    1.5 to 2 cups canned Diced Tomatoes, not drained

Tips

Curry paste or garam masala would work, too.


Directions

Cook the onion, celery, garlic, and curry powder on medium heat until the onions are softened but not brown. If using cooked lentils (from a can, frozen/cooked, or ones you cooked), add remaining ingredients and heat through before serving.

If using dry lentils, add 1 cup cooked lentils and 2.5 cups water, then bring to a boil. Lower heat. Simmer 20-30 minutes, until lentils are the consistency you like.

Serving Size: Makes 4 servings (or 2 really big ones)
