Ingredients

    Ingredients:
    2 whole chicken breasts, boneless skinless, diced very small (1/2" cubes)
    1 egg white
    1 Tbs soy sauce
    1 Tbs cold water
    Mix well and set aside for 30 minutes

    Mix sauce:
    1 Tbs cornstarch
    1 Tbs soy sauce
    1 tsp white vinegar
    1 tsp sesame oil
    3/4 cup water

    Green onions, diced (1/4" slices)
    2 whole dried red chili peppers
    4 black shitake mushrooms, soaked 1/2 hour and diced
    1 cup cashews

Directions

Instructions:
In a wok or pan, heat 2 Tbs oil. Add chicken mixture. Stir until chicken separates and changes color. Remove from heat.

Heat 2 Tbs oil, brown 2 red chilies peppers w tips removed, until they turn dark red. Add diced green onions and the chicken and stir fry for 1 minute.

Stir in sauce mixture. Stir until thickened. Add cashews before serving. Serve with stir fried rice.
