Ingredients

    1 tsp butter
    4 (4-ounce) boneless center-cut loin pork chops
    3/4 tsp salt
    1/4 tsp black pepper
    3 Tbs chopped shallots
    1 tsp minced garlic
    1/4 cup port wine
    2 Tbs balsamic vinegar
    1/3 cup plum preserves

Directions

From Cooking Light: couscous and green beans make good compliments to this meal.
1. Melt butter in a large non-stick skillet over medium-high heat. Sprinkle pork with .5 teaspoon salt and pepper. Add pork to pan, cook 3.5 minutes on each side. Remove from pan.
2. Coat pan with cooking spray. Add shallots and garlic to pan, saute 30 seconds. Add port and vinegar to pan, cook 30 seconds stirring occasionally. Sitr in remaining .25 teaspoon salt and plum preserves, cook for 30 seconds or until smooth, stirring constantly. Return pork to pan, cook 30 seconds or until desired degree of doneness, turning to coat. Spronkle with parsley if desired. Yield 4 servings (serving size: 1 pork chop and about 1 Tablespoon glaze).

    Very tasty. I made a few alterations since I didn't have all the ingredients (onions vs shallots, honey vs port wine) but it still turned out great. - 1/22/08
