Introduction

Ingredients

2 large Egg, fresh, whole, raw
1 cup Whole Wheat Flour
0.5 cup Flour - Gold medal all purpose flour
8 tbsp *Flax Seed Meal (ground flax)
1 tsp Baking Powder
.25 tsp Salt
.5 cup Butter, salted
4 medium (7" to 7-7/8" long) Banana, fresh
.5 cup Sour Cream
1 cup, unpacked Brown Sugar
Tips
You can add flavorings (vanilla, almond extract, etc.) and spices (cinnamon, ginger, nutmeg, cloves, etc.) to your taste.
Directions
Blend butter and sugar until creamy. Stir in eggs. Stir in sour cream. Add 1 tsp. of vanilla if desired. Mash banana and add to mixture.
In a separate bowl measure dry ingredients and whisk together. Add spices such as cinnamon, nutmeg or ginger if desired.
Pour wet ingredients into dry ingredients and mix lightly until combined. Pour into a prepared loaf pan (greased and floured, or lined with parchment) and bake at 350 for 60-65 minutes, until a knife or toothpick comes out with moist, but not wet crumbs.
Cool completely and slice. Serve plain or with your favorite toppings, butter, jam, lemon curd, etc.
