Ingredients

1 cup Steel Cut Oats, dry
16 oz Almond Breeze Almond Milk, Unsweetened Vanilla
2 cup (8 fl oz) Water, tap
1 tbsp Coconut Oil
Tips
Mix-Ins:
peanut/nut butters
jams/preserves
applesauce
fresh berries, bananas, apples, etc...
dired fruits
toasted nuts
ground flax seed
toasted coconut
dark chocolate/mini chocolate chips
whipped cream
cottage cheese
yogurt
anything else you can think of.
Directions
1. In a large saucepan, combine the water and milk. Bring to a simmer over medium heat.
2. In the meantime, melt coconut oil in a 12-inch skillet (cast iron would be awesome!) Once shimmering, add the oats and cook, stirring occasionally, until golden and fragrant, about 2 minutes.. The toasting brings out the nutty sweet flavor of the oats.
3. Stir the toasted oats into te simmering milk mixture. Reduce heat to medium low and simmer gently for about 20 minutes, stirring occasionally, until the mixture is very thick
4. Stir in the salt and any flavorings you may want to add (like cinnamon!) . Reduce heat as necessary to prevent scorching on the bottom, until almost all of the liquid is absorbed.
5. Remove from heat and stir in any mix-ins you may like. Let the oatmeal rest for 5 minutes so it has time to thicken up and cool down.
6. If you have left-overs, let cook completely beofre covering and refrigerating for future.
