Number of Servings: 4

Ingredients

    1 cup vital wheat gluten
    2 Tbsp nutritional yeast
    2 tsp onion powder
    1 tsp garlic powder

    1 1/2 Tbsp cashew butter
    3/4 cup hot water
    1 Tbsp low sodium tamari
    1 tsp liquid smoke (optional)
    4 Tbsp BBQ sauce of your choice (I used Annie's Organic)

Directions

Preheat oven to 350
In a bowl mix the first four ingredients.
Dissolve the cashew butter in the hot water. Add the tamari and liquid smoke if using.
Pour the wet into the dry, mix well with your hands. If it's very dry as in: not all combining, add a little more water. Knead in the bowl for a minute or two.
In an oiled 9x9 baking dish, spread the seitan out until it fills the pan.
With a sharp knife, score seitan with 8 parallel cuts. Turn dish 1/4 turn and score right across the middle, making a total of 16 "ribs".
Bake 20 minutes.
Remove from oven and brush BBQ sauce generously over the top and sides if seitan has pulled away at all from the sides.
Bake 5 more minutes.
Remove from oven and with a spatula, flip ribs. Brush with BBQ sauce and bake 5 more minutes.
Remove from the oven and flip over again so scored side is up.
Pull apart to eat.

    Incredible!
    I thought these were terrific and no bones! Next time I'm invited to a BBQ I'm going to wrap up a serving of these in foil and ask them to throw them on the grill to reheat for a few minutes.
    They remind me a lot of the McRib Sandwich at McDonald's (when I used to eat meat).

    Made these last night for my non-veg bf and I ..they were delicious! It was my first experience baking seitan and I'm never going back! Served them with brown rice and garlic green beans and I'm having the leftovers on a 100 cal bun today for lunch :) - 9/8/11
