Ingredients

    1 tsp of avocado oil
    2lb pork sirloin tip roast (very lean) chopped into bite size pieces
    salt, pepper and creole seasoning to taste

    1 cup chopped onion
    7oz can of diced green chilies
    1 T chili powder
    1T italian seasoing

    2 cups diced fresh tomatoes or 1 can diced tomatoes
    2 cup of chicken broth
    3 cup black beans or 2 cans of black beans, drained

    2lbs chopped sweet potato

    1/2 cup chopped cilantro for garnish

Directions

Sprinkle meat with salt, pepper and creole seasoing and brown in your Instant Pot on saute mode with avocado oil until no longer pink. Add onion, chilies, chili powder and italian seasoning and saute for another 2 minutes. Add tomatoes, black beans and broth and stir to combine. Layer the chopped sweet potatoes on top. Place the lid on and set nob to "sealing". Turn off Saute mode and cook on Manual setting for 15 minutes. Allow the pressure to come down naturally. Garnish each bowl with chopped cilantro

    I am kind've a foodie and very picky about recipes. I took one look at this recipe and had to try it, I had all the ingredients on hand.     What an amazing stew. Added 3 large cloves of garlic and used shallots instead of onions because that is what we had. So good my teenager even loved it. - 2/9/18
