Introduction

This is my original recipe, with crushed pork rinds substituted for the crushed saltine crackers. This is my original recipe, with crushed pork rinds substituted for the crushed saltine crackers.

Ingredients

    2 large eggs, fresh, whole, raw, beaten
    1 can pink salmon (undrained)
    4 tbsp Heinz Reduced Sugar Ketchup
    1/2 bag Pork Rinds, crushed (Baken-ets Fried Pork Skins)
    10 drops liquid stevia
    0.25 tsp Old Bay Seafood Seasoning
    1 tsp Lime Juice - ReaLime 100% Lime Juice

Tips

Best when done to a dark brown, crispy crust. These are enjoyable when cold, too.


Directions

Mix all ingredients. Preheat a large heavy skillet to medium-high and melt equal parts coconut oil and butter. Make 13 flat 2" diameter patties by scooping up for each one a heaping tablespoon full. Then lower the heat to medium and brown on both sides, about 5 minutes each side, at medium heat.

Serving Size: makes 13 patties
