Ingredients

1/3 cup olive oil
1/3 cup balsalmic vinegar
1 Tbls brown sugar
Salt
8 oz mushrooms
1 cup onions slivered
1 bag spinach
Directions
Mix vinegar, brown sugar, and 1/4 teas salt in mixing bowl. Whisk in oil. Add mushrooms and onions to the bowl and stir to coat well. Using a slotted spoon, transfer to a glass baking dish setting aside the dressing. Bake for 12 to 15 minutes until golden brown. Pour the dressing over the veggies until the dish warms it. Add spinach to a serving bowl and combine with the dressing.. Garnish with 1/4 cup of Parmesan cheese.
