    1 yellow pepper, medium
    1 orange pepper, medium
    1 red pepper, medium
    2 cup, whole Mushrooms, fresh
    3 whole, sliced Zucchinis
    1 large Sweet potato
    3 tbsp Olive Oil
    3 oz Feta Cheese


Use a big baking pan so the vegetables cook evenly and to ensure there is not too much liquid.


- Cut all vegetables into large chunks
- Mix with oil, salt, pepper and oregano
- Bake at 400 degrees F for 40 minutes
- Put into bowl and sprinkle with Feta Cheese
