This is a quick easy soup recipe. I often make it after new year's day to use up the left over ham. When I don't have a large ham to cut up I buy a ham steak, which is what the recipe calls for. Ingredients

    0.66 cup Mixed Vegetables (Frozen)
    1.5 oz Ham Steak (cubed)
    2 oz V8 Original 100% Vegetable Juice
    .75 cup Swanson 100% Natural Chicken Broth
    .25 cup Vegetable Broth

Tips

The list of ingredients are calculated for 1 serving. Use 40 oz bag of frozen mixed veggies, 32 oz chicken broth, 16 - 20 oz veggie broth, half of a 46 oz bottle of V8 juice.


Directions

1. Pour 32 oz. chicken broth, 20 oz vegetable broth, 23 oz V8 juice (about half the bottle) into a large pot.
2. Add 40 oz bag of frozen mixed vegetables
3. Cube ham steak and add it to the mix (1 hole ham steak - 8 oz)
4. Add seasonings to your taste (salt, pepper, seasoning salt, etc.)
5. Bring to boil and reduce heat to simmer. Stir regularly to avoid scorching. Simmer for about 20 minutes.

If you want it more soupy, add water.
