Some days I've found my calorie count to be too low, but I don't want to eat unhealthy foods just to make up the difference. This is a nice treat I can make in my Vitamix that adds nutritional value to my day. 0.33 cup Trader Joe's Coconut Cream
2 tbsp chia seeds
1 tsp Vanilla Extract
1 cup (8 fl oz) Water, tap
