Introduction

Ingredients

1 cup plain yogurt
pinch of sugar
1 T oil
1/2 tsp mustard seeds
1/4 tsp fenugreek seeds
1/2 inch fresh ginger, minced
pinch of asefetida
1 whole dried red chile
1 small onion, finely chopped, about 1 cup
pinch of salt
2 Tsp chopped cilantro
Directions
-Whisk the yogurt until smooth and mix in the sugar, set aside
-heat the oil in a pan just big enought for the onions and add the mustard & fenugreek seeds. When they start to pop, add the ginger, asefetida, & chile. Cook, stirring, for a minute to bring out the flavors. Add the onions and lower the heat. Let them cook about 10-15 minutes to soften.
-pour the onion mixture into the yogurt and mix through. Add salt and cilantro. Let chil before serving.
Makes 3 servings (1/3 cup)
