Introduction

I spotted this on Tiny Morsels' blog (http://tiny-morsels.blogspot.com/) and knew I had to give it a go. Not having the erythritol or agave that she calls for, and not being able to have coconut, I swapped unsweetened almond milk, honey and brown sugar instead. Makes 6 popsicles. Ingredients

    5 oz low-fat silken tofu
    1 cup unsweetened, plain almond milk
    1/2 tsp vanilla (or almond or coconut) extract
    2 Tbsp carob powder
    1 tbsp honey
    1/4 cup brown sugar

Directions

Combine all ingredients in a food processor or blender, and pulse until smooth.
Pour into ice molds and freeze solid.
