Ingredients

    10 oz Buttercup Squash 1/2 squash, approx. 10 oz., baked or steamed=1 serv.
    .125 tbsp margarine, hard, blue bonnet
    3 tsp unpacked Brown Sugar

Tips

Don't waste the seeds! In a small skiller, put 1 tsp. of margarine or butter and the washed and cleaned seeds. On medium heat, pan fry, stirring occasionally, till both sides are golden and crisp. Add a dash of popcorn salt and enjoy!


Directions

Cut a buttercup squash in two. Scoop out the seeds and wash off the gunk in the middle and throw away gunk. (Save seeds for pan frying later for a snack.) Put in a cake pan or a deep skillet. Add about 1/2 in. of water to pan. Put brown sugar and margarine and a dash of salt in middle of cavity. Cover pan with lid or foil. Bake at 350 for about 45 min. till flesh is tender, or steam on stovetop in skillet for about 30 min. till flesh is tender.
