Ingredients

    3 medium red-skinned potatoes
    1 C shredded cabbage
    1 tsp dijon or stoneground mustard
    1 tsp dried dill or 1/4 C fresh
    1/4 C red onion, minced finely
    1/3 C chicken broth

Directions

1. Poke potatoes with fork, microwave 5-7 minutes or until mostly cooked. Allow to cool, then cube.
2. In a cooking sprayed skillet, brown onion until soft and fragrant. Add potatoes, allow to brown (appx. 2-3 minutes). Add cabbage, brown 2 minutes. Add broth, mustard, dill, cook until cabbage reaches desired texture, appx. 5-7 minutes.
