Ingredients

    Topping:
    1 large ripe tomato (chopped)
    1 large clove garlic (minced or pressed)
    3-5 fresh basil leaves (cut or chopped)
    2 tbsp capers (with juice)
    2 tsp olive oil

    Fish:
    8 oz. halibut (1/2" fillets)
    1/8 cup flour (I use whole wheat)
    1/8 tsp salt
    1/8 tsp pepper
    1 tsp olive oil

Directions

Combine all topping ingredients in a bowl and set aside. Combine flour, salt and pepper in a pie plate (or other plate or bowl suitable for dredging). Heat oil in frying pan over medium heat. Dredge fish in flour mixture to coat both sides and place in heated oil. Cook until about halfway done and flip. Once fish is cooked all the way through, remove from pan and place directly on serving plate. Remove pan from heat and pour topping mixture in stirring constantly. Once mixture is heated through, spoon evenly over fish.
