Ingredients

    1lb- 1" thick pork loin chops
    Mango Salsa--combine the following and chill at least one hour
    1 mango- diced
    1 pepper (anaheim or bell) finely diced
    1/4C cilantro diced
    2T lime juice
    1 small red onion, diced
    dash salt and pepper

Directions

Make Mango salsa and chill.
Grill pork chops to done- roughly 10 minutes each side on medium low heat
Top with chilled salsa and enjoy!

    Yummy! I didn't have lime juice but substituted peach juice & a splash of lemon juice. Since I'm not a cilantro fan, I left it out. And since I had the oven on for scalloped potatoes & cooked carrots, I simply baked the chops rather than grilling. - 7/7/11

    On a summer's day, the mango salsa is very refreshing over the grilled pork, although the cold made the meat cooler too. The flavors are a good combination though. I didn't have any fresh bell peppers on hand, so I used roasted pepper. And we're not cilantro fans, so I just added other spices. - 6/7/11
