Introduction

Ingredients

    1 med. onion, chopped
    1 med. green pepper, chopped
    1 med. yellow pepper, chopped
    2 small zucchini, sliced in thin half moons
    2 cups washed then cooked Swiss Chard, chopped
    7 large eggs, beaten
    .25 cup skim milk
    .25 cup flour
    1.25 cup shredded 2% colby jack cheese
    1 tsp. salt
    1 tsp. pepper
    1 tbsp. olive oil

Directions

Boil salted water then add clean Swiss Chard for about 2 minutes. Drain and chop.

While waiting for the water to come to a boil, heat EVOO in a pan and saute onion and garlic. When slightly softened, add zucchini. Cook until softened some and add peppers. Add half the ground black pepper. When swiss chard is ready, add that to the cooked mixture.

Mix flour with the shredded cheese and add into the beaten eggs. Add salt and pepper to taste.

Put veggie mix into a casserole dish and pour egg and cheese mixture into the veggies. Mix into the veggies and put into a 400 degree oven until a knife inserted comes out clean (approx. 15-20 minutes).
