Number of Servings: 2

Ingredients

    2 green bell peppers (could probably use other red or yellow, haven't tried)
    1 cup cooked brown rice
    10 oz ground turkey
    1/2 medium onion, chopped
    1 tsp cumin
    1 tsp italian seasoning
    2 tsp garlic powder
    1/2 tsp pepper
    1 medium or roma tomato, chopped.

Directions

cook onions and turkey together in a pan until onions are cooked and turkey is no longer pink. Halve the peppers and clean out seeds/ribs. Boil 2-3 minutes to soften slightly, but don't overcook. Mix turkey/onion mixture together with the rice, and add seasonings and tomato. Put pepper halves in a baking dish, and stuff with the turkey/rice. Top each half with about half a tablespoon of cheese. Bake at 325 for 20-25 minutes. Makes 4 half-peppers or 2 stuffed peppers.

    very good. I used fresh garlic and added tomato sauce to the bottom of the baking dish. It made a nice sauce to put on the top of the pepper when it was done. By the way, there isn't any cheese listed in the ingredients and it was great without it! I guess I can take calories off, right? - 1/27/09

    I liked this, but I added about 3/4 of a can of tomato paste and water, because it was pretty dry, then I covered with foil and cooked an additional 25 min. The peppers were so much more tender this way. - 2/28/09

    I made this tonight & will definitely make it again.
    I didn't boil the peppers & didn't put any cheese, but i did add some spicy tomato sauce on top for a little zing. DH loved it!

    YUMMMM!!! I also used ground turkey breast. I added 2 tablespoons of light sour cream. A very satisfying meal! - 1/14/09
