Ingredients

    small onion Chopped
    1 jalapeno, minced
    1 clove Garlic, minced
    1 1/4 pounds of shirmp (uncooked, deveined and tail removed)
    3 or 4 tomatoes, chopped
    salt and pepper to taste
    cilantro - fresh - chopped
    1 tbsp lime juice

Directions

coat a 12 inch pan with non-stick spray oil
add onion, jalapeno & Garlic
cook 2 minutes
add tomatoes cook 5 minutes
add shrimp, cook until done about 5 minutes or less
stir in cilantro & lime juice simmer 2 minutes

makes 4, 1 cup servings.
