Number of Servings: 1

Ingredients

    - 1 medium garlic clove
    - 1 1/2 cups carrot juice
    - 1/4 tsp salt
    - 1/4 tsp pepper
    - 1 1/2 cups shelled edamame
    - 2 medium scallions
    - 2 tbsp fresh or dried cilantro
    - 3/4 cup couscous
    - 1 oz. roasted or sliced almonds

Directions

Mince garlic to make 1 teaspoon (or buy it already minced).

In a saucepan, combine garlic, carrot juice, salt and pepper. Bring to a boil over high heat.

Remove from heat and add edamame. Return to a boil. Reduce heat to low, cover and simmer for 4 minutes.

While edamame simmers, chop scallions to make 1/2 cup and 2 tbsp of cilantro. Set aside.

Increase heat to high and return edamame to a boil. Stir in couscous. Cover, remove from heat, and let stand 5 minutes.

Meanwhile, chop almonds. Fluff couscous with a fork, add scallions, cilantro and almonds.

    Very Good
    I wouldn't have thought to add edamame to my couscous... I'll definitely do it again! I will leave out the scallions... that flavor was overwhelming. - 2/28/09
