Number of Servings: 4


    1 large Onion, chopped
    1 clove Garlic, minced
    300 grams Zucchini , cut in half inch cubes
    1 tbsp Canola Oil
    3 large Eggs
    .5 cup Flour, white
    1 tsp Baking Powder
    .5 cup (8 fl oz) Yogurt, plain, low fat
    1 tsp Oregano, ground
    1 cup, crumbled Feta Cheese
    Salt and pepper to taste1 tbsp Parmesan Cheese, grated


Cool for 10 minutes before serving


Sauté onion and garlic in oil until soft. Stir in zucchini and cook until tender crisp. Add orevpgano, salt and pepper to taste. Set aside to cool.
In a large bowl, mix together eggs, flour, baking powder, yogurt and feta. Stir in zucchini mixture.
Pour into a pie plate. Sprinkle with parmesan. Bake at 350 for 30 minutes, or until top is browned and mixture is set.
Let cool for 10 minutes before serving.
