Introduction

Number of Servings: 1

Ingredients

    1 Soft taco sized Flour Tortilla (i use Guerrero brand)
    2 large Eggs
    1 tsp ( i typically use less...just a dab) hellmans olive oil mayo
    2 ounces Cooked Chicken Breast
    1 tbsp Salsa
    0.2 Avocados, California (Haas)

Tips

this is VERY changeable according to your dietary needs. it's also delicious with bacon and cheese. but then that's the problem with most diets...we take something healthy and then load it with fats until it isn't healthy any longer. i say with tortillas and eggs already having plenty of fat, stick to ONE fat as an add on. i love avocado on it!


Directions

the only cooking involved is the eggs. i use leftover grilled chicken in mine so it goes together really quickly.

scramble eggs. i use a touch of mayo in the eggs right at the end to help them emulisify and stay fluffy.

Then assemble:
tortilla, eggs, chicken, avocado, and salsa
