Introduction

A wonderful savory alternative to regular salsa. You can leave out the avocado if you like, but it's really and truly not noticable in this recipe - my avocado-phobic husband and daughter never even noticed and they absolutely love this salsa! I love to add it to grilled chicken & onions for an excellent Pollo Verde. It's also great in rice, on chips, anything you can think of! A wonderful savory alternative to regular salsa. Ingredients

    Tomatillos, 1.5 cup, chopped or diced
    Garlic, 4 cloves
    Scallions, raw, 3 medium
    Parsley, .5 cup
    Cilantro, raw, 4 tbsp
    Jalapeno Peppers, 1 pepper
    *Green Chiles, 4 oz
    Lime Juice, 3 lime yields
    Avocado, 1 fruit
    Salt, 1 tsp

Directions

1. Chop garlic finely by dropping through the feed tube of food processor while the motor is running (appx 10 seconds). Add the scallions, parsley, cilantro & jalapeno, chopping finely.
2. Add tomatillos and remaining ingredients and process until pureed.
3. Refrigerate, covered.
