Ingredients

    2 medium (2-1/2" dia) onions, diced
    4-5 oz baby bella mushrooms, diced
    1 can Muir Glen Organic Fire Roated Adobo Seasoned Petite Diced Tomatoes
    200 gram debreziner (Hungarian paprika sausage), sliced
    8 large eggs
    1 package (12 oz) hashed brown potatoes, frozen
    12 oz Kirkland Signature Mexican Blend Cheese
    Seasonings to taste (adobo powder, aleppo pepper, paprika, freshly ground black and white pepper)

Tips

Use any veggies you like, just make sure they are cooked enough that they won't release liquid while baking.


Directions

Saute onions and mushrooms until softened. Add diced tomatoes with liquid and let simmer until most of the liquid is evaporated.
Saute debreziner slices in another pan, drain off fat.
Whisk eggs with seasoning.
Spread 1/3 of the frozen hash browns in a 9x13 pan, spread over half the vegetables, half the sausages, and 1/3 of the cheese. Repeat. Cover with remaining potatoes, top with remaining cheese. Pour egg mixture evenly over the casserole. Let rest at least half an hour, up to overnight (in the fridge).
Heat oven to 425F. Bake casserole for 45 minutes until browned. Let rest at least 10 minutes before serving.
