Ingredients

    8 oz. thin spaghetti
    approx. 6 cloves of garlic
    1 medium onion
    6 oz. medium cooked shrimp, thawed
    2 fl. oz. key lime juice concentrate (equiv. 3 to 4 fresh key limes)
    2.5 Tbsp. unsalted butter
    10-12 fresh basil leaves
    1 tsp. salt
    4 Tbsp. grated romano and parmesan cheese blend

Directions

While water is boiling for pasta, finely chop onions, garlic and basil. Cook spaghetti (thin spaghetti usually takes 7-9 minutes); saute onions in butter over medium heat until soft. Add garlic and shrimp and saute 2-3 minutes. Add basil, lime juice and salt; saute one minute more and remove from heat. Drain pasta and toss with shrimp mixture. Serve and sprinkle with cheese.

    This was good, but with the all the flavor from the lime and garlic, I feel it needs some heat to counterbalance it. My husband added some red pepper flakes to his and said it was much better. Will add them if I make it again. - 6/26/08
