Ingredients

    5 Bay Leaf
    1.50 tsp Coriander seed
    3 tsp Cumin seed
    0.25 tsp Pepper, black
    2 1tsp Olive Oil
    6 oz Chorizo, pork and beef
    0.17 fl oz Lime Juice
    3 stalk, medium (7-1/2" - 8" long) Celery, raw
    4 clove Garlic
    1 large Onions, raw
    1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, sweet, red, fresh
    1 pepper Jalapeno Peppers
    2.25 cup Beans, black
    3.63 cup Canned diced tomatoes with onion and green pepper, Del Monte
    2 serving Aidells Cajun Style Andouille Smoked Pork Sausage 1 link
    8 oz Ham, extra lean, (5% fat)
    1 tsp Salt
    3 tsp Hot Sauce - Best Choice Louisiana Style
    4 14.5 oz can Broth, chicken: College Inn, Light & Fat Free, 50% less Sodium

Directions

1) clean and washed beans. Put beans in a pot and cover with water. Soak over night. Next morning bring to a boil and reduce to a simmer and simmer for 2 hours.
2) take about 1/3 of the beans and mash.
3) Cut the sausage into 1/2 inch pieces. Dice ham into 1/2 inch cubes. Brown the sausage and ham.
4) In a large stock pot, saute the peppers, onion and celery in oil until tender. Add garlic and saute about 1 min.
5) Add sausage, broth, tomatoes, cumin, coriander, hot sauce, pepper, bay leaf, mashed and whole beans. Bring to a boil and reduce to a simmer. Cover and simmer for 2 hours.
6) remove bay leaf and stir in lime juice.

Serving Size: makes about 11- 12 oz servings
