Ingredients
-
Wet:
1/2 cup nonfat milk or unsweetened almond milk (nutrition here is with almond milk)
2 tbsp unsweetened applesauce
1 cup mashed banana
2 egg whites
Dry:
1/2 tsp cinnamon
1/8 tsp nutmeg
2 tsp stevia
1 tbsp baking powder
1 1/2 cups oat bran
3/4 cups fiber one cereal, crushed into a powder
1/3 cup raisins
Directions
Preheat oven to 425 degrees and spray a muffin tin with Pam or equivalent.
Soak raisins in warm water for about 10 minutes or so while preparing the rest of the recipe.
Combine all of the dry ingredients in one bowl and mix well and then combine the wet ingredients well in another bowl.
Pour the wet mixture into the dry and stir well (I do it with a fork). Add soaked raisins (without the water!) and mix again. Pour into muffin tins and bake for 15-18 minutes or until golden brown.
Makes 12 muffins.
1 muffin = 0 WW points
(2 muffins = 1 WW point, or if make only 6 larger muffins, 1 muffin = 1 WW point)
