    Almond crust:
    3/4 cup Bob's Red Mill Almond Meal
    1.5 scoops Unjury Vanilla protein powder
    1 tbsp light butter
    1/2 tsp vanilla extract
    1.5 tbsp lemon juice
    3/4 cup Polly-O reduced fat ricotta cheese
    3 oz 1/3 reduced fat Philly Cream Cheese
    1.5 tbsp dry Jello instant lemon pudding mix (sugar/fat free)
    1/2 tsp vanilla extract
    zest of 1 lemon


Grease and line a mini muffin tin with paper liners. Set aside. Mix almond meal, protein powder, melted butter and vanilla together. Press mixture firmly and evenly mini muffin papers (about 3/4 full.) Bake at 350 for 12 minutes or until lightly browned. Remove the crust from the oven and let it cool before adding the filling.

Mix filling ingredients together and spoon onto cooled crusts. Top if desired. (Top with strawberries, lemon zest, coconut, whatever you desire!)
