Ingredients

    1.0 cup Libby's 100% pure canned pumpkin
    0.5 cup, packed Brown Sugar
    0.5 cup Buttermilk
    1 tbsp Butter, salted
    2 large Egg white, fresh
    1 tsp Baking Soda
    0.5 tsp Baking Powder
    1 tsp Pumpkin Pie spice
    1 cup Wheat flour, white, all-purpose, unenriched

Directions

Preheat oven to 350 degrees F. Spray or grease mini bundts pan. Mix all ingredients together and fill pan about 2/3 full. Bake for 22 minutes. Let set for 5 minutes. Loosen edges and they will pop right out by flipping pan over. Sprinkle with cinnamon sugar or powdered sugar or eat plain with a dollop of Reddi Whip on the top. Topping adds calories not included in recipe.
